BEAUTIFUL PIE HOLES

There are pie holes (where you put your pie). And then there are pie holes that help make the pie. These amazing pies, created by Karin Pfieff Boschek and Dr. Bruce Boschek are beautiful on both hole counts.

These pies are graced with some of the most creative, imaginative crusts. Artfully carved pastry dough, formed into decorative patterns and shapes form openings in the tops of the pies, allowing their colorful fillings to shine through like jewels.

Karin is an artist, cook, photographer, and co-founder of the Our Delicious Food. She and her husband Bruce handcraft each pie, using home-made pastry. The designs are all their own.

Fanciful lattices, braids, leaves, flowers, stars, snowflakes, hearts -- all made of dough, are arranged perfectly. They so look beautiful before the pies are baked -- but they are beyond scrumptious once they are golden, flaky and kissed with light brown by the oven.

“Learning to create pleasing designs in shortcrust pastry or pâte brisée that will hold up when baked takes some practice and experimentation,” Karin explains. “Certain shapes and designs may look beautiful before baking, but melt or become distorted in the heat of the oven. Under these circumstances it is necessary to reconsider and modify the design.”

Some pies look better after baking and some before baking. “Shortcrust pastry has a life of its own.”

The Boscheks have been sweethearts for a long time. Karin, a native of Hesse, Germany, and Bruce, a native of Indiana, met in school French class in 1982. They have been cooking together ever since.

Karin and Bruce now live and bake together in a house in the Antrifttal on the edge of the Vogelsberg National Park, in Germany. They’ve been renovating, restoring and rebuilding it for decades. Previously, the 100-year old house originally served as an abbey for nuns of the order of St. Elisabeth. Perhaps there is some divine intervention at work -- adding another layer of spirit to these heavenly pies...
