EAT DRINK TRUE BLUE
Blue is the rarest color for edibles. There aren’t many naturally blue foods. It makes them all the more precious.
There is one edible with a blue so brilliant, it makes your head spin. The Butterfly Pea Flower. The Latin name Clitoria ternatea references the flower’s shape, as it is similar to female genitalia.
Butterfly Pea Flowers are harvested daily during first bloom in the early morning hours and either eaten fresh or are then sun-dried.
These blue flowers are used In Southeast Asia to naturally color food. In Malay cooking, check out the blue glutinous rice dish kuih ketan. In Thailand, drink the syrupy blue nam dok anchan (น้ำดอกอัญชัน). In Burma, enjoy blue floral fritters. We like to freeze them into pops!
